Sapan Minanga is produced at some of the highest growing elevations in Indonesia. Cherries are carefully sorted, de- pulped and fermented overnight, then washed and laid out on patios. Before the coffee loses much of it’s moisture, the parchment paper is removed. This process, called Giling Basah in the Indonesian language, leaves the bean exposed while drying, giving it a unique blueish color and Indonesian profile.
